Preparation of alcohol by breaking down of Carbohydrates
Fermentation is the process of breaking down of complex carbohydrate compound into alcohol by anaerobic oxidation(in absence of oxygen) by the use of enzymes i.e. zymase, invertase etc. and micro organisms like yeast. The reaction is illustrated below.
